Straski claimed the his paintings subjects are from memories of his childhood and the father like relationships he had with the Rabbis of his youth. He kept his sanity while interned by sketching their likenesses. Later, he depicted these same Rabbis in his paintings with warm colors and fond memories of the lessons they taught him. Often they are shown teaching the Torah, violin, or the cello.
His paintings were and are on display at numerous Holocaust memorials, art exhibits, and historical venues. Most notably you can find his art at the Museum of Jewish Art (MOJA) in New York.
